Why very high temperatures matter, and why floor temperature, top heat and recovery are more useful than a headline maximum alone.

Temperature is a system

Neapolitan-style pizza is associated with very hot, fast baking, but a single air-temperature reading does not describe the whole oven. The floor, dome and flame each transfer heat differently.

Floor temperature

The base needs enough stored energy to set and color the dough quickly without burning it before the top is ready. An infrared thermometer is useful for learning how your floor behaves.

Top heat

A strong flame and hot ceiling help cook toppings and the cornicione rapidly. Turning the pizza balances the side closest to the flame with the rest of the crust.

Recovery between pizzas

After a pizza absorbs energy from the floor, the surface needs time and heat to recover. This is why insulation, refractory mass and burner/fire management matter during consecutive bakes.
